HEAT EXCHANGER AIR - AIR
The operation is very simple: the fresh and clean air is drawn from outside , filtered and made to pass inside a pipe , which in turn form a coil in a large hexagonal drum insulated ( the heat exchanger ) . Inside this drum works a burner of methane gas, which heats the thermal contact to the pipe inside which passes the clean air , which in turn heats for thermal osmosis . At this point, the heated air until you have collected the last degree , is pumped into the roasting drum where it awaits the raw coffee , all without which neither this nor the air never come into contact with a flame or with combustion residues . Thus, the raw starts to cook in a slow and gradual , according to a roasting curve controlled by the computer system.
